Healthy Fried Rice

Did you like to eat veggies when you were little? As long as I can remember, I always disliked them when I was a toddler. Now, as a mom of two young kids, I'm always looking for new ways to introduce all different kinds of veggies to my girls. Try this recipe, my girls love it! And best of all, very simple and quick to make!

Healthy Fried Rice
serves 4
prep time 5 minutes
cook time 10 minutes

252 calories ONLY!

-Heat 2 tsp. of canola oil in a large nonstick skillet on medium. Whisk eggs and add to the skillet. Cook, stirring occasionally to break up eggs, until set. Remove from pan. Add remaining 2 tsp. oil to the skillet and then increase the heat to medium-high. Stir in the frozen vegetables; cook for 5 minutes or until tender.

- Add stir-fry sauce and crushed red pepper to the skillet (very very little). Stir in rice and heat through, then mix in the cooked eggs. Let your kids squeeze on lime juice, to give the dish extra flavor.

When we took a trip back to Rochester NY over the July 4th weekend, we've found this abandoned bird nest right next to my daughter's God parents' house! I was so amazed by how perfect they are and how much work the birds had put into their lovely home! Nature itself is just so amazing!

What's for dinner?

Summer weather here in D.C. can get very very hot! When that happens, I often like to make very refreshing and light dishes for dinner.

If you are a Salmon lover, you are going to love this one! This meal cost under $6 per serving! It can be a great dinner for entertaining too!

Asian BBQ Salmon Burger (480 calories per burger)
serves 4/Cook time 20 min./Chill time 30 min.

YOU NEED:

half - seedless cucumber, peeled. thinly sliced.
1 - green onion, thinly sliced.
half - Tbsp Rice Vinegar
4 - Ready to Cook Salmon Burger ( you can find it at major grocery seafood dept.)
1/4 cup - Asian Style BBQ Sauce
4 - Leaves green leaf lettuce

What to Do:

1. Toss cucumber, onion, and rice vinegar in a large bowl. Drain, discarding liquid. Chill Veggies, covered, until ready to serve, at least 30 min and up to 3 hours.
2. When ready to serve: Using soft cloth, coat grill grate lightly with vegetable oil. Place burgers on grill; reduce heat to MEDIUM. Brush top of burgers with BBQ.
3. Sear burgers on grill 2 min, until they have changed color about on-quarter of way up from bottom. Turn over; brush with BBQ sauce. Sear 2-3 min. Turn again; reduce heat to MEDIUM or LOW. Close lid.
4. Cook about 8 min, until internal temp reaches 165 degrees. Check internal temp by inserting thermometer halfway into thickest part of burgers. Transfer to clean platter; set aside.
5. Arrange lettuce on plates; top with burger. Top with onion-cucumber mixture; serve.

Sides pairing: Asian Fruit Slaw (ONLY 100 Calories per 1 1/2 cups)

serves 4/cook time 15 min

1 pkg (12 oz.) Cleaned and Cut Asian Slaw
1/4 cup dry roasted sunflower kernels
2 cups Mango Chunks
2 green onions, thinly sliced
1 pkg (10 oz.) Fresh Pineapple rings (cut into bite-size chunks)
2 Tbsp Reduced sodium soy sauce
1 Tbsp Rice Vinegar

Combine all ingredients in a large bowl and serve right away!

Wine pairing: Beringer Chardonnay Napa!
Rounded and heavier, with a bit of spice and citrus, this Chard has some oak to go toe-to-toe with the strong Asian and BBQ flavors in this meal!

Berries where you least expect them! Great Healty Summer Recipes!

Food is a huge part of our lives.

Healthy food = Healthy body = Healthy mind!

As a working mom of 2 young children, I am always trying to find great recipes that's healthy for the whole family and EASY AND QUICK to make. So I came across this one today, and thought it is very unusual. At same time, it looks like a very good recipe for summer time! Here is goes...

Strawberry Caprese Pasta Salad (ONLY 322 calories)

Ingredients
  • 8 oz. Driscoll’s Strawberries
  • 8 oz. shell pasta, cooked, rinsed and cooled
  • 8 oz. fresh mozzarella balls, drained
  • 1/4 cup slivered fresh basil
  • 1/4 cup slivered red onion
  • 1/4 cup prepared balsamic vinaigrette
Instructions
  1. Rinse, hull and quarter strawberries.
  2. Combine strawberries, pasta, mozzarella, basil and onion in a large bowl. (Can be prepared to this point and refrigerated until ready to serve.)
  3. Drizzle with vinaigrette and mix gently until ingredients are well coated.

Vintage West Germany Mint Green and Modern Black and Gold Necklace



One of my latest creation! It's one of my favorite.

Both Modern and retro! Just simply beautiful!

The beautiful mint green beads are vintage and they were made from west Germany. Gorgeous carved teardrop bead is black with a detailing gold inlay, which measures 27x18mm.

This necklace is about 36 inches long. Long enough to slip over your head without the need for a clasp. That's what I love about this necklace! Very easy to put on and take off!
